A Note from the Campfire Kitchens

This summer campers of all ages will be trying out some new cookout recipes! We invite you to join in the fun using the recipes we share in each eTraveler this summer.

Hillbilly Burritos - Explorers (7th-9th grade)

Ingredients (4 servings)

  • 1 pound prepared taco meat
  • ½ cup salsa
  • 2 cups shredded Cheddar cheese
  • 4 burrito size tortillas

Generously grease both sides of the pie iron with non-stick cooking spray.  Place 1 tortilla on the pie iron.  The tortilla should be large enough to cover both sides of the open pie iron.  Spoon some of the prepared taco meat, salsa, and shredded cheese onto one side of the tortilla.  Fold remaining half of the tortilla over the filling and fold edges in to make a square packet.  Close iron and hold over flames for 3 minutes on each side, until tortilla is gold brown.  Remove iron from fire and open carefully with a hot pad or over mitt.
