A Note from the Camp Kitchens

Greetings from Camp Hiawatha! As I sit and look out the windows here at the stunning snowy landscape, I revel in the beauty of it all. God is so good and gives us so much. His love is shown to us in so many ways. In northern Minnesota we are so very lucky to have very distinct seasons and are able to enjoy each with its own beauty.

As the months roll by and spring comes closer, I wait with anticipation. Anticipation for what will come....warmer temps, green grass, and the fact that the days draw closer to the time campers will arrive once again. I feel so blessed to be a part of this organization and these two great camps. So lucky to be able to spread God's love in such beautiful places. As work on the new dining hall at Camp Vermilion progresses, we can all wait with excitement and anticipation to see this project completed. Let's all look forward to what 2016 will bring to our ministry. 

I am also looking forward to spring and the time my rhubarb will grow. I love the stuff! I have a collection of my favorite rhubarb recipes and pulled this one out to share. It's so easy! It's a quick dessert for unexpected company.

RHUBARB CUSTARD CAKE

  • 1 yellow cake mix
  • 1 cup sugar
  • 4 cups diced rhubarb
  • 1 cup heavy cream
  1. Preheat oven to 350 degrees.

  2. Mix together yellow cake mix as directed on box.

  3. Grease bottom only of a 9x13 glass baking pan. Pour cake mix in pan.

  4. Sprinkle 4 cups diced rhubarb evenly on top of batter.

  5. Sprinkle 1 cup of sugar over the rhubarb.

  6. Pour 1 cup heavy cream over top.

  7. Bake at 350* 40-45 minutes. (Check after 30 minutes.)

Spring will come. the rhubarb will grow! Enjoy!
