Notes from the Camp Kitchens

Spring has sprung!  With that comes many changes as the trees are budding or leafing out, the lakes are open, swimming rafts and docks are in the water here at Camp Hiawatha, the grass is growing once again, and  plants are emerging from the earth reaching towards the sun. We are busy planning for our campers and so much more.

We as well, as people of God, face changes in our lives. We begin "new seasons" in our lives.  For me the return to camp has been good, helping me to move forward in my life.  To be busy getting the kitchen ready and planning summer menus feels good.  I am so thankful for my "camp family". Thank you all for the love and support that you have shown me. It has meant so much. Let me share with you one of my springtime favorites.     

Glazed Fruit Medley
10 Servings

  • 1 cup sugar

  • 2 Tablespoons cornstarch

  • 2 cups orange juice

In saucepan combine sugar and cornstarch. Whisk in orange juice until smooth. Bring to boil, cook over medium heat stirring constantly 2 minutes or until thick. Chill 2 hours.  

Add to chilled sauce:

  • 3 cups cubed honeydew

  • 3 bananas sliced

  • 2 cups red grapes halved

  • 2 cups green grapes halved

  • 1 can chunky pineapple drained

Stir to combine. Chill at least 2 hours. Enjoy!!
