Notes from the Camp Kitchens

I hope each and every one had a blessed Thanksgiving and enjoyed time with family and friends. We really do have so much to be thankful for.

With the Christmas season upon us it reminds me of a quote from  "How the Grinch Stole Christmas", a movie my grandsons love to watch. "It came without ribbons. It came without tags. It came without packages, boxes or bags. Maybe Christmas doesn't come from a store. Maybe Christmas means a little bit more." My hope is that we remember the real reason for the season...the birth of our Lord Jesus Christ. We get caught up in the busy preparations that this time of the year brings but I encourage  you to take the time to spend  with loved ones this year and enjoy each others company.  Those are things that can't be bought and will make memories that will last a lifetime. 

The following recipe is one that we have enjoyed as a family for years on Christmas morning and I hope you will too!

Christmas Morning Egg Bake 

  • 1 Tablespoon butter

  • 1 cup sliced green onion

  • 10 eggs

  • 1/2 cup milk

  • 1 32oz. package southern style diced hash browns

  • 2 cups lean cooked ham

  • 1/2 cup diced red pepper

  • 1 1/2 cup shredded cheddar cheese

Generously spray a 9x13 baking pan with cooking spray. Set aside. In a small skillet melt butter over medium heat. Cook onions and peppers 2-3 minutes, stirring occasionally, until tender. In large bowl mix eggs and milk until well blended. Stir in cooked onions  and peppers, ham , potatoes and cheese. Pour into baking dish. Cover and refrigerate overnight. In the morning heat oven to 350* and bake 30-35 minutes or until  dish is set and center temps at 165*. Season with salt and pepper to taste.  ENJOY! MERRY CHRISTMAS!
